Easy and Tasty Roasted Pork Belly

Roasted Pork is one of our family's favorite food actually not just our family but rather an all time favorite dish of my entire country. Ask any Filipino family you know and "lechon" or roasted pig is a common word in every household. Any Filipino gathering is incomplete without lechon as a centrepiece. Any occasion, celebration or a tiny reunion calls for lechon on the table. This dish is not only tasty but also so easy to prepare.

 1 Pork Belly (slab)
 2 Lemon Grass stalks (sliced vertically)
 2 Leeks (sliced vertically)
 3 Garlic cloves
 1 Onion (chopped)
 1 tsp Black Pepper (ground)
 1 tsp Sea Salt

Preheat the oven at 375 F

Wash the pork belly slab then wipe it dry.

Slice the pork meat diagonally then start rubbing it with salt and pepper. Rub the spices into the meat's slices to ensure the flavour will seep.

Put the leeks, lemon grass, crushed garlic and sliced onion in the middle section of the pork.

Roll the belly securing all the spices in the middle and tie it with the kitchen twine. Your pork belly should now resemble a log.

Baste the rind with olive oil. (I used bacon grease instead of oil 😊)

Place the pork belly in the roasting pan and in the oven's middle rack. Cook for 2 1/2 hours.

Slice the roasted pork belly. Serve and enjoy!
