Keto & Low-Carb Sesame Bagel

I must admit to all of you that I am a high carbo and high sugar type of person. I'll have carbo for breakfast, lunch and dinner. And all of those meals must end up with a dessert, and of course, for me dessert = sugar. Switching to Keto diet is really a challenging thing for me. I am thankful to discover that my beloved high carb food cravings do have a Keto version. Take the bagel for example 🙂 one of my staple breakfast item is just one bake away! Hooray! 

I can totally say that this bagel helped me with my transition to the Keto lifestyle. My hubby and my kiddos were in awe as they feast on this Keto bagel. You can have bacon, cream cheese, eggs or whatever you can think of to best pair with your bagel. I hope you enjoy this easy recipe.

Keto and Low-Carb Bagel? Why not! Getting into Keto diet requires you to ditch the carb but don't worry because some of our staple food items have a Keto version, take this yummy Sesame Bagel recipe for example.

 2 cups Almond flour
 1 tbsp Baking Powder
 2 Organic Eggs
 1 Organic Eggs (beaten to be used for eggwash)
 3 cups Shredded Mozzarella Cheese
 5 tbsp Cream Cheese
 2 tbsp Sesame Seeds

Preheat your oven to 425 deg F. Line a parchment paper to your baking pan or a silicone baking mat.

Use a mixing bowl and put a flour sifter and sift your almond flour along with your baking powder (Sifting the flour makes the ingredients to combine evenly)

Add 2 eggs in the mixture, then, whisk one egg on a tiny bowl and set this aside. This egg will be used for egg wash later. Start to mix and combine the eggs with the almond flour.

In a separate microwaveable bowl combine the shredded mozarella cheese and cream cheese. Microwave it for 1 minute then mix throughly until the the cheeses are well combined. (you can add another 30 seconds to a 1 minute microwave time if needed)

You can now add the cheese mixture to your main mixing bowl. Mix all the ingredients until they are well incorporated. (feel free to microwave it for 30 sec to 1 min if the dough becomes unworkable)

Cut the dough in 8 equal sections. Roll and stretch each portion and make the shape of a bagel. Lay the bagel shaped dough in your baking pan. Make sure that the doughs are not too close from each other as they will rise.

Now it's time to egg wash the top of the bagel doughs. Use a food grade brush and gently wash the top of each dough.

Now sprinkle the bagel with sesame seeds. You can also use different bagel toppings that you prefer.

Place your baking pan in the middle rack for 12-15 minutes until the bagels turns golden brown.
