Keto & Low-Carb Yummy Sesame Loaf Bread

Bread is absolutely my best friend for as long as I can remember. Being on a high fat - low carb diet aka Keto made me kiss the regular bread goodbye. Switching to Keto diet doesn't mean that you can't have any bread forever, all you have to do is to modify or tweak the ingredients and make it keto friendly. I am very surprised to see the many delicious food choices this diet has to offer. I never felt so deprived to eat some of the staple foods that I used to enjoy. This Keto loaf bread recipe is really easy to prepare and make. It is perfect to eat during breakfast, lunch or even supper. Unlike the typical bread made up of flour, these loaf is made up of almond flour making it easier for our body to digest. I love the feeling of lightness after eating keto bread compared to the bloated feeling I get out of eating a regular flour made bread.

 2 cups Almond Flour
 7 Eggs (must be in room temp)
 ½ cup Butter (melted)
 2 tbsp Coconut Oil (melted)
 1 ½ tsp Baking Powder
 ½ tsp Salt
 2 tbsp Sesame Seeds

Preheat your oven to 350 deg F

Put the eggs in your mixing bowl then beat it on medium to high for 2 mins.

Add the butter, coconut oil, salt and keep mixing until they are well blended. Set aside.

In a separate medium bowl, sift your almond flour and make sure that no clumps remain.

Add the baking powder and mix it well with the almond flour.

Slowly combine the almond flour+baking powder mix with your egg mixture. You will notice that the mixture will slowly thicken and will look like a runny dough.

Grease a rectangular baking pan or a baking glassware with coconut oil. Pour the mixture and sprinkle the sesame seeds on top. Bake for 40 minutes.

Remove the baked loaf in the oven and check if it's done by poking a bamboo skewer in middle. If the skewer comes out clean meaning its ready, if not, put the loaf back in the oven for another 5 mins until it's fully baked.

Cool the loaf before taking out of your baking pan or cutting it to avoid crumbling. Serve and enjoy!
