Quick Tomato and Green Bell Pepper Omelet

Its been almost 2 weeks since we decided to be on a keto diet, I must admit that there are times that my old eating habit still kicks in strong during breakfast time 🙂 Realizing that I have totally gave up carbs and sugar, I quickly start foraging my fridge for any fast breakfast solutions. This omelet recipe is a keeper, not only because it taste great but it also satiate your hunger. I added whipping cream for extra oomph & fat to this amazing power breakfast. My love for bell pepper goes a long way back, however if you are on a keto diet, you must not over devour these yummy greens for they are on the high side of carbs. Tomatoes are considered keto but just like bell pepper it must be consumed moderately. I hope you will find this recipe useful for your Keto journey.

Tomato and Bell Pepper omelet is a great way to start your day. Forget the carb laced bread, sugar cereals, and processed breakfast entries that you use to have. This is a light and hearty breakfast that will surely sustain you till morning snack time or even up to lunch.

 2 Eggs
 ½ cup Whipping cream (sugar free)
 ½ cup Green Bell Pepper
 ½ cup Tomato (in this recipe I have used brown tomato)
 1 Onion
 2 pinches Sea Salt
 2 pinches Ground Black Pepper
 2 tbsp Butter

Crack the eggs in a bowl and whisk it for a minute. Pour the whipping cream and mix until well blended.

Cut your tomatoes, bell pepper, and onion into tiny squares then set aside.

Heat up your skillet and melt the butter. Start adding the onion. Once the onion almost looks transparent, add the green bell pepper stir for a minute then add the tomatoes.

After a minute add in the eggs and whipping cream mixture. Sprinkle the salt and ground black pepper. Keep stirring until the egg is not runny or start to form clumps. Serve and Enjoy!
